Meal prepping lunches 🥗

So one thing I do regularly is meal prep lunches for me and my partner. My go-to meal is usually salads with chicken, bacon and either feta or grated cheddar cheese on top. I’ll assemble a week’s worth on a Sunday night. This is a great time saver because we don’t have to think about lunch all week. We just grab one on the way out the door and take it to work. It also saves money because the alternative would be eating fast food for lunch every day. Not only is that very unhealthy, but it adds up quick! Fast food is expensive in 2025. It usually takes me a couple hours to make a weeks worth of lunches for 2 people but I don’t mind. I pop in my AirPods and listen to some music or a podcast & get to work. First thing I do I season some chicken breasts and pop them in the oven.

While the chicken is cooking I start prepping the lettuce. I start by discarding the outer leaves of the romaine heart, they are usually not in the best shape. The good stuff is underneath. Then I chop up the lettuce and wash thoroughly. I have a salad spinner to dry the lettuce after chopping it up.

After that the lettuce goes into some glass tupperware bowls and we’re ready for toppings!

Sometimes I cook up fresh bacon and slice that up but lately I’ve been skipping that step by buying a bag of cooked & crumbled bacon from the grocery store, its just as good and saves me a little time. I had some grated cheddar cheese leftover in the fridge from last night’s dinner so I also put that on the salads.

By now the chicken breast is cooked, been cooling for a couple minutes and is ready to be sliced up and added to my salads.

Salads are done. Just need to pop the lids on and stick them in the fridge. Oh yeah, I fill up smaller containers with salad dressing to accompany each salad. This week we’re going with caesar dressing. Can’t wait for lunch tomorrow. Bon appétit!

Salad with chicken sounds like the one that I should definitely try out. I am looking for a quick option which can save me both time and money and knowing how to prepare that would be of immense help to me.
@Henrywrites Its easy enough to do. You just need to sacrifice an hour of your day once a week and the rest of the week you can just grab one and take it to work.
